There’s something wonderfully old‑world about Irish Honeyed Parsnips — the kind of simple, rustic side dish that feels like it came straight from a farmhouse kitchen. Parsnips sweeten naturally after a winter in the ground, so when you roast them with a drizzle of honey, they turn golden, caramelized, and almost candy‑like. They may not win any beauty contests fresh from the garden, but once they hit the oven, they transform into one of the most irresistible sides on the St. Patrick’s Day or any day table. It’s humble Irish cooking at its best: unfussy, comforting, and absolutely delicious.
Preheat your oven to 350°F. We just harvested our winter crop of parsnips, and honeyed parsnips are one of the easiest and most delicious ways to enjoy them. Scrub, peel, and trim the ends of the parsnips.
Place them in a medium saucepan, cover with water, and bring to a boil. Cook for 5–10 minutes, just until they begin to soften, then drain well. If your parsnips are on the larger side, quarter them lengthwise before continuing with the rest of the recipe.
Lightly grease a shallow baking dish with olive oil and add the parsnips in an even layer.
Drizzle with olive oil and honey, then toss to coat thoroughly. Bake for 35–45 minutes, stirring occasionally so they caramelize evenly. About halfway through, drizzle on another tablespoon (or more) of honey. Bake until the parsnips are rich golden brown and perfectly caramelized, then take them out of the oven, let them cool for 10 minutes, and serve.
